tofu scramble

I had forgotten about one of my favorite breaky recipes from my past and decided to make it today along with my summer season favorite, orange leafy salad!

Tofu scramble – 1 serving

  • 2” chunk extra firm tofu-crumbled or diced
  • ½-1 c fresh spinach
  • 1-2 mushrooms, sliced
  • 1 shallot, green onion and or 2 T diced sweet onion
  • 1 T miso paste
  • 1 tsp roasted sesame seed or black sesame seed
  • 1 T roasted sunflower seed
  • ½ tsp sesame oil
  • 1 T coconut butter
  • 2 T water



  • dice or crumble tofu chunk
  • dice onion & mushroom
  • heat oils in small skillet
  • sauté tofu & veggies until spinach is limp
  • mix in miso paste & water, stir until the paste is smooth and thoroughly mixed with water
  • sprinkle with seeds
  • serve hot


Summer orange leafy salad

  • ½ head red leafy lettuce (2-3 cups) washed & torn
  • 2-3 cups fresh spinach, washed & torn
  • 1-2 cups grated carrot
  • 1 orange, peeled & cut into large chunks
  • 1 apple, diced
  • 2 T peeled, finely diced fresh ginger
  • ½ c Saskatoon berries or blueberries
  • 1 c coarsely chopped walnuts
  • ½ c raw pumpkin seed
  • ¼ c black sesame seed
  • ¼ c hemp seed


  • ½ c kombucha tea
  • 1/3 c orange juice
  • ¼ c hemp seed oil
    (you can add the ginger to the dressing if you like)
  • shake in a bottle before pouring over salad
  • mix salad and dressing together
    serve chilled
