Savory brunch muffins

I had some left over baked potatoes to do something with, so came up with this recipe!


1 c mashed potatoes
1 egg
1 c milk
½ c oil
½ c applesauce (unsweetened)
1 celery stick, minced
¼ c sweet onion, minced
1 tsp Himalayan sea salt
½ tsp coarse black pepper
½ tsp celery salt
1 tsp crushed rosemary
½ tsp poultry seasoning or savory
½ c roasted unsalted sunflower seeds
2 c flour (home milled + 2 T psyllium husk)

optional (1/2 c) 1- 2 diced, fried pork sausages

Mix together mashed potatoes, egg, milk and oil
Stir in rest of ingredients
Fill greased muffin tins
Bake 325f 30 minutes
Grease 12 muffin tins
