Refreshing carrot-beet summer salad

This has become my top favorite summer salad because it is so darned refreshing!

It takes 5 minutes to make (make extra so it’s “ready to eat”!)

Carrot-beet salad recipe:

  • 1 c grated carrots
  • 1c grated beet
  • 1 T finely diced ginger root
  • 1 diced orange
  • 3-4 plums diced (optional) or
  • ¼ c dried cranberries or raisins
  • ½ celery stalk, finely chopped
  • ¼ c chopped toasted almond, walnut (optional)
  • 2T raw pumpkin seed


Best chilled before serving
