My favorite home baked cookie of the week!
½ c peanut butter oil, butter, vegetable shortening or oil of choice
½ c peanut butter
½ c coconut sugar
½-1 c semi sweet chocolate chips
2 T psyllium husk
1 T tapioca starch
¼-1/2c ground flax seed
dash Himalayan salt
1 tsp allspice
1 tsp cinnamon
½ tsp clove
2 T black strap molasses
2 c home milled flour
1/2c + water (add more if too dry)
cream together in mixing bowl: oil, peanut butter, sugar, molasses & egg
stir in spices, psyllium husk & tapioca starch
stir in flour, mix well, add water if too dry
form into balls, press down on lightly greased cookie sheet 2” apart, press with fork.
Bake 350f 15-18 minutes until golden brown
Let cool on cooling rack, but of course a warm one must be tested!
Makes about 24 x 2”-3” cookies
