Granola bars

I haven’t made these in a long time and totally forgot how good they were!

makes 1 cookie sheet
350f 20 minutes

2 c roasted roughly ground or chopped almonds
1/2 c toasted un sweetend shredded coconut
1/4 roasted unsalted pumpkin seed
1/4 c roasted unsalted sunflower seed
2 1/2c flaked grain( any kind, I use a mix).
1/2 cranberries
1 T minced orange rind, dry or fresh
1/2 tsp himalayan sea salt


1/2 c coconut sugar
1 c unpasturized honey
1 T natural blackstrap molasses

Roast all of the nuts and seeds. If you have a blender with a grain blade such as the Vitamix grain container, grind the toasted almond. Otherwise chop them up.

Combine all of the dry ingredients.

Bring to boil, sugar , honey & molasses.


Pour the boiled syrup into dry ingredients and mix thoroughly.

Press onto greased cookie tray (with sides), or cover cookie sheet with parchment or waxed paper.

Bake 20 minutes until golden.

Let cool until it begins to harden before removing from cookie pan, otherwise the dough is too soft to remove. Though do not leave until completely cold as it may harden to the bottom of the pan! (Using parchment or waxed paper solves this problem.)

Slice into squares, let cool on cooling racks before storing in an airtight container.

Try not to eat them all at once!
