I have a few bags of frozen cherries, harvested last fall and had an idea to make cookies with them. My first try using fresh cherries in my new recipe and they turned out wonderful fluffy and super tasty!
3 1/2 c home milled flour-(I incorporated 1 c toasted quinoa flour for a nuttier flavour)
1 tsp psyllium powder ( or 1 T flakes)
1 T tapioca starch (any kind will do)
1 tsp baking soda
1/4 tsp himalyan salt
3/4 c coconut sugar
3/4 c melted butter
1 egg plus 1 T ground flax seed (instead of 2 eggs)
2 c coarsely chopped cherries (frozen is fine)
1 c dark semi sweet chocolate chips
1/2 c unsweetened shredded coconut
1 c home flaked grain ( I used a mix of rye, oat & spelt)
1/2 c water (add a little at a time if the batter is too stiff or dry)
1/2 tsp allspice
1 tsp cinnamon
Beat egg, stir in psyllium, sugar, tapioca starch, beat in melted butter
stir in dry ingredients, fold in cherries & choc chips, adding water at the end if needed.
Bake on lightly greased cookie sheet ( I use melted coconut butter)
Bake 375 20 minutes
Make 1 large pan.
Let cool on wire racks before storing in airtight container
Super yummy to eat warm!
